Amounts are rounded to friendly kitchen fractions. Leavening, salt and spices often need a lighter hand than a straight multiplication.
Helpful planning notes
- Salt, spices and hot peppers rarely scale in a straight line — start at about 75 percent of the calculated amount and adjust by taste.
- Baking powder and baking soda should be scaled carefully; doubling them can leave a metallic taste.
- Cooking times do not scale with quantity. A doubled casserole in a bigger pan needs more time, not double the time.
- Pan size matters more than volume. Two 9x13 pans behave differently than one very deep pan.
- Nothing you type is saved or transmitted — refreshing clears the form.
