How these estimates are calculated
  • Each recipe dish uses the ingredient amounts and serving count from its published Heritage Kitchen recipe.
  • Servings needed = guests × leftovers setting (×1.0, ×1.15 or ×1.3).
  • Drinks use a 1-cup planning portion. Piece portions come from each published recipe’s piece yield divided by its servings; cakes are cut into the published number of servings. These portions receive the same leftovers and course adjustments.
  • With 2 or more main dishes, each main is reduced (25% less with 2, 40% less with 3, 50% less with 4+), since guests take some of each.
  • With 3 or more dishes in any other course, each one gets a smaller portion (5% less at 3, down to 25% less at 9+), because guests take a little of everything.
  • Batches are rounded up to the nearest half batch, then every ingredient is multiplied by that number.
  • Ingredients are combined only when they are the same item in convertible units (teaspoons, tablespoons and cups; ounces and pounds). Recipe measurements are kept as written — no guessed package sizes.
  • Items the recipe lists without an amount, such as frying oil or salt to taste, are shown as “as needed”.
  • Turkey is a purchase-weight planning estimate only. The glazed ham dish uses the published recipe, with a per-guest ham-weight estimate noted under the batch. Follow package or USDA guidance for thawing and cooking.
