Collard Greens vs. Mustard Greens vs. Turnip Greens
They all cook down in a pot with smoke and vinegar, but they are not interchangeable. Here is how they actually behave.
Collard greens
Thick, sturdy leaves with a mild, earthy flavor. They take the longest to cook — 45 to 90 minutes — and hold their texture without falling apart.
Mustard greens
Thinner and distinctly peppery, with a sharp bite that mellows as they cook. They soften in 25 to 40 minutes.
Turnip greens
Tender and slightly bitter, often cooked with diced turnip root. They are the fastest of the three at 20 to 35 minutes.
Mixing them
A mixed pot is common and delicious. Add collards first, then mustards, then turnips so everything finishes together.
